Ingredients for Middle Eastern Rice Salad:
- 2 tablespoons olive oil
- 1/2 Vidalia or sweet onion
- 1 can chickpeas
- 1/2 tablespoon cumin
- 1/4 tablespoon salt
- black pepper
- 3 cups cooked brown rice
- 1/4 cups chopped fresh mint
- 1/2 cups chopped dates
- 1/4 cups chopped parsley
Making of Middle Eastern Rice Salad:
Heat the oil over medium heat in a non-stick pan. Add chopped Vidalia or onions and stirred up-to 5 minutes, until it changes their colour to brown. Then add chickpeas, cumin and salt and stir and add black pepper to taste.
Now, add cooked brown rice with onion- chickpea mixture and combine both. Then take a large bowl and add dates, mint, and parsley and rice mixture and stir well until they combined well.
